Caramelised apple pie

These individual apple pies reminded me of the pies from McDonalds. I find that making individual pies instead of one big pie makes it easier to store and reheat whenever you like, even though my family finished these in one breakfast. This apple pie uses readymade roll out pastry and therefore omits the hardest part of making the flaky pie crust. There’s nothing wrong with making life easier for yourself.


















Ingredients (Serves 10)

· ½ cup sugar, plus extra for sprinkling

· ½ teaspoon ground cinnamon

· ¼ teaspoon freshly grated nutmeg

· 4 large, tart cooking apples, about 3 pounds in total

· 4 tablespoons (½ stick) unsalted butter

· 1 tablespoon cornflour

· 1 pound, or 1 recipe, readymade roll out pastry



Method

· Start by preparing the caramelized apple filling. Mix the sugar, cinnamon, and nutmeg together. Peel, quarter, and core the apples, then cut into thin pieces.

· Place in a bowl and sprinkle with the spiced sugar to coat. Fry the apples in two batches: Melt half the butter in a wide, nonstick frying pan, add half the apple chunks, and fry over high heat until golden and caramelized around the edges, about 5 minutes.

· Add half tablespoon on cornflour and mix. Transfer to a large bowl. Repeat with the remaining apples and butter. Let cool completely.

· Preheat the oven to 180 C. Roll out about half of the pastry on a lightly floured surface to about ⅛-inch thickness.

· Split the pastry into 10 equal pieces and add about 2 tablespoons of the filling on one side of each piece.

· Fold each piece and seal the edges with a fork. Place them on a baking tray and sprinkle sugar on top of each one for a crispy top.

· Bake until the crust is golden brown and crisp. Let stand for 15 - 20 minutes before serving.
