Vitla Khandvi, also known as Patuli or Suralichi Vadi, is a Gujarati savory snack. It consists of yellowish, tightly rolled bite-sized pieces and is primarily made of gram flour and yogurt or curd. As this snack takes a lot of effort of continuously stirring for a long period of time, using a microwave to make this can make your life a million times easy.
Recipe:
For 3-4 members (or for yourself 😜)
Time - 50 minutes
Ingredients
Gram flour - 1 cup (100 grams)
Curd - 1 cup (200 grams)
Coriander - 2-3 tbsp (finely chopped)
Oil - 2-3 tbsp
Green chili - 2 finely chopped
Curry leaves - 8-10
Turmeric powder - half of 1/4 teaspoon
Asafoetida - 1 pinch
Rye - 1/2 tsp
Mole - 1 teaspoon
Salt - 3/4 tsp or as per taste
Method
Batter:
Prepare a very smooth solution by adding curd, gram flour and 2 cups of water in the mixer jar (you can also prepare the batter in a bowl). Put the solution in a microwave safe bowl, mix salt, turmeric, asafoetida and 1 tbsp oil.
Microwave:
Keep the cup in the microwave and microwave it for 2 minutes. Take out the cup and stir it well. Place the bowl in the microwave again, and microwave it for 2 minutes. Take out and stir well. Microwave again for 2 minutes, take it out again and stir well.
Microwave again for 1 minute (microwave the solution for 7 minutes) Take out the bowl and stir the solution well. The batter is ready to make Khandvi.
Preparing:
Take a plate or tray to spread the solution, or a clean surface, spread the solution very thin with the help of a spatula.
In 10-15 minutes, this mixture cools and freezes, cut this frozen layer into 6 inch long 2 inch wide strips with the help of a knife and make a roll of these strips, put all the rolls on the plate.
Tempering:
Now put oil in a small pan and heat it, cut green chilies lengthwise. Put mustard seeds in hot oil, after roasting it add sesame seeds, curry leaves and green chillies and fry it lightly. Pour this mixed oil with a spoon over Khandvi. Garnish with green coriander and coconut.
