Sugar Free Cake

After fasting for a month, it is natural for one to want to indulge into some yummy treats. Keeping in mind that most of us have stayed at home with limited exercise, feasting on high calorie foods can lead to a feeling of extreme guilt and some unwanted weight gain. You can beat the cravings with fruits, dry fruits, dates and figs. This eggless, sugar free, butter less cake is bound to have your family asking for more.

Ingredients.
•18-20 dates
•1 ¼ cup milk
•1 cup whole wheat flour
•½ cup oil
•1 tsp baking soda
•½ tsp baking powder
•Handful of walnuts
Method
•Slightly warm the milk and de-seed and soak the dates for 4-5 hours. More or less time might be required depending on the dates
•Chop and dry roast the walnuts on medium on a pan or in the oven until fragrant. Let them cool
•Once the dates are soaked, blend the dates with the milk into a smooth paste
•Add oil and mix
•Sieve in the flour, baking soda and baking powder and mix slowly
•You can add 4-5 tablespoons of sugar if required
•Add the nuts to the mixture and mix
•Pour the mixture in a 6x8 inch greased cake tin
•Bake in a preheated oven at 170 degrees for 35-40 mins.
